Kale salad
Ingredients
- 1/2 lb. spinach
- 2 oz. red onions, sliced very thin
- 1/4 cup red onions, chopped fine
- 1 teaspoon garlic. minced
- 3/4 cup balsamic vinegar
- 2 tablespoons red wine vinegar
- 1 1/2 tablespoons sugar
- 1/4 cup olive oil
- 1 whole Polish sausage, quartered and sliced thin
- salt & pepper
- 4 tablespoons goat cheese
Directions
- Remove stems from spinach and rinse in cold water.
- Dry spinach well and keep in refrigerator, while making the dressing.
- Heat a skillet and add 1 tablespoon of olive oil.
- Add sliced sausage and saute the sausage until it starts to get brown.
- Add the chopped onions and saute some more. Add the garlic and saute
- for 2 minutes.
- Add the rest of the ingredients except sliced onions.
- Season with salt and pepper and reduce the dressing by one third.
- Toss the spinach in a large bowl well with the sliced onions and the dressing.
- Split up the salad in four cold bowls and top with goat cheese.
- Offer extra fresh ground pepper.
